I love my mom’s cooking, so most of the recipes I know by heart come from hers. One of mom’s fav dishes I never tried until recently… her breakfast potato hash. I never tried it because I am not a fan of white potatoes. But it occurred to me that I could swap out the white potato for sweet potato (which I LOVE) and throw in some extras, like my favorite spicy breakfast sausage. It really is an easy recipe that is great with a side cheese eggs. Here’s what you will need:
Olive oil-3 Tablespoons
1 medium onion
1 red pepper
1 large sweet potato
2 andouille sausage links
Dice all of the ingredients
Heat your skillet
Add olive oil
Add the potato first, cook for about five minutes on low/medium heat
Add onions, peppers, sausage
Cook until potatoes are at desired texture (I like my potatoes crispy)
Serve with scrambled cheese eggs and/or fruit.
