I love to cook. Actually, one of my favorite things to do is challenge myself by trying new recipes. Because of my work, I get to meet many great chefs and collect a lot of cook books. They are my resource when I want to sharpen my skills in the kitchen.
For my latest culinary creation, I turned to one of my favorites, Rocco Dispirito. The last time he stopped by our studio, he brought along his latest book, Now Eat This! 150 of America’s Favorite Comfort Foods-All Under 350 Calories. How can you not love that?
What I love most about Rocco is that his cookbook recipes are easy to follow and produce incredible food. I used to make a calorie packed version of chicken picata that I found on line. Delicious! But then I tried a recipe for the same dish from another of Rocco’s low cal books and I have to admit… his version is much tastier!
From his most recent book, I took a stab at the Shrimp and Asparagus Stir Fry. It required a short list of ingredients and was simple to make. The most involved part was making the teriyaki sauce… which was so simple. I do have to admit, when I saw one of the ingredients was low call ketchup I had my doubts, but baby… that sauce is the bomb!! The entire dish was restaurant quality! I put it over some brown rice and had two helpings. I was stuffed, but it was sooo worth it.
The recipe makes enough to feed four, but you’re going to want to keep it all for yourself. It’s good to be Single, lol!
